Amarosa is a remarkable red/pink fingerling potato with intense colouring throughout the flesh and skin.  Colour is vivid pink at harvest and mutes to darker red with time.  Flesh retains colour through cooking and the grainy flesh lends itself well to making delicious pink baked or mashed potatoes.  Full-season or later maturing.
